Caprese Mushroom Melts
Tender mushrooms, juicy tomatoes, dripping cheese... These will simply melt in your mouth.
Ingredients:
4 Large Portobello Mushrooms
1 Large Tomato
4 Slices Mozzarella Cheese
4 Tbsp Olive Oil
2 Tbsp Basil Pesto
4 Fresh Basil Sprigs
Directions:
Preheat oven to 375 degrees F. Remove mushroom stems and gently wash mushrooms. Place mushrooms on a lightly oiled baking sheet. Combine olive oil and basil pesto and brush mushrooms with mixture. Bake mushrooms for 20 minutes or until tender. Slice tomato into four slices, placing one on each mushroom. Bake 10 more minutes. Add a layer of cheese on top and bake until melted. Put fresh basil leaves on top.
