Mini Party Desserts - Cheesecake Shooters
Hi there Smarties! What have I planned to talk with y'all today? Today's topic is a mix between my favorites and parties! All of you know of my love for parties. The decorations, the lights, and The FOOD are some of my favorite things. My passion for food is strong, but my love for the dessert people serve at the end of the meal is stronger! So whenever I plan a party, I put extra heart and soul into making my desserts more delightful to my guests.
Today, I thought of sharing some of my favorite mini-party desserts to eat and serve!
Here is my first recipe for you all. So get ready with a spoon attached, y'all! So that you can dig in immediately. Believe me, you'll want to!
Cheesecake Shooters
This recipe has all the good things in the world. And trust me, when you serve this to your guests, they will ask for a second serving. So, here's a little advice for you: make extras!
Alright, here is what you will need to put together these perfections.
Ingredients:

1 pkt (8 oz.) cream cheese. This should be softened

1 cup of canned pumpkin

1/2 cup of sugar

1/2 tablespoon of pumpkin pie spice

2 1/2 cups whipped topping, plus extra to garnish pie crust
-
1 1/2 cups of crushed gingersnaps (or graham cracker crumbs if you prefer)
-
1/4 cup of brown sugar
-
2/3 cup butter. You need to melt the butter

Pomegranate seeds

Bowls
If you are ready with all the ingredients, let's get started. Follow the instructions to get your hands on some delicious cheesecake shooters.
Directions:

Grab a bowl and put the gingersnaps, graham cracker crumbs, brown sugar, and melted butter into it. And mix them well together.

Now, take the shooters and press the mixture of gingersnaps into their bottoms. After you have done that, let the shooters sit in the fridge. Why is refrigerating necessary? We need the mixture to set in the shooters.

While it sets, let's prepare the filling, shall we?

Beat the cream cheese, pumpkin, sugar, and pumpkin pie spice with an electric mixer on medium speed until they are well blended.

Then gently stir in the 2-1/2 cups of whipped topping. And you are done.

After you are done with making the filling, put it into a piping bag.

Take the shooters out of the refrigerator. And then pipe the cream cheese mixture into shooter glasses on top of the crust. And you are done making the cheesecake shooters. But there is one small step before you can enjoy these.

Once again, refrigerate the shooters for about 3 hours or overnight.

Finally, serve topped with remaining whipped topping and pomegranate seeds.

Stained Glass Pudding
To make this delightful recipe, you will need only a few ingredients.
Ingredients:
To make the jello, you will need,

Jello (I used 4 colors, you can use more or less than that)

4 cups of hot water(1 cup per jello packet)
Step one - Dissolve the jello packets in the water. Remember, you need to use one cup of hot water per packet. Next, put them into four different containers and refrigerate them. A minimum of two to three hours will be enough.
To assemble this goodness, I used cube cups.
Until the jello sets, let's work on the milk mixture, shall we? To make the condensed milk mixture, you will need,

One tin of 14ounce condensed milk tin

1 cup of hot water
-
9 teaspoons of gelatin (this will be 3 tablespoons. You can use any gelatin you want. It can be flavored or unflavored!)

A quarter cup of cold water
Step two - Add the condensed milk and hot water to a large bowl. Stir the mix well. In another bowl, dissolve the gelatin. After the gelatin is well dissolved, add it to the milk mixture and stir everything together until well combined. And then let the mixture cool down.
Step three - Take the jello out of the refrigerator and cut it into small cubes.
Step four - Place a mix of jello into your cube cups.
Step five - Then, pour the condensed milk mixture over the jello. And refrigerate.
It should take about one and a half hours to two hours to set. Then, after they are correctly put, take them out and enjoy! The jello colors look so beautiful in the clear cups, right?
What's better than jelly? Layers of jelly, sponge cake, custard, and cream! Here's my favorite mini trifle recipe.
Mini Trifles
To make these delish desserts, you will have to gather the below-mentioned ingredients.
Ingredients:

Jello of your choice (I used strawberry jello. I love both the flavor and color)

One cup of hot water
-
Sponge cake
-
Custard
-
Whipped cream
-
Fruit of your choice(I used strawberries, thinly sliced)
Directions:
Dissolve the jello in hot water. Then pour the well-dissolved mixture into the martini shot glasses. Remember to fill enough to form a layer only. And put them into your refrigerator to set.
Until the jello sets, we'll work on our custard, alright? This custard recipe was passed down to me by my grandma. So this is a unique recipe for me.
Ingredients for the custard:

Three-fourths of a cup of heavy cream
-
Three-fourths of a cup of full-fat milk
-
Four egg yolks (I used large eggs)
-
Half a tablespoon of corn flour
-
Three tablespoons of superfine sugar
-
One teaspoon of vanilla extract
Step one: Mix the sugar, vanilla extract, egg yolks, and corn flour in a carafe until well combined. Keep this aside. Heat the milk and heavy cream together in a pot until bubbles form. Keep in mind that we don't need these to boil! Then take the kept aside mixture, pour little by little, and stir using a whisk. Turn the flame back onto medium and stir until the mix is thick. Turn off the flame and let the custard cool.
Step two - Take the shot glasses out and place a layer of sponge cake on top of the jello.
Step three - use the homemade custard as the third layer. You can use a store-bought pack to make these too.
Step four - Pipe a layer of whipping cream on top of the custard.
Step five - Garnish with the fruit of your choice. And serve!
