Fried Cheesy Jalapeno Poppers

Ingredients:
- 16 jalapeño peppers
- 3 cups oil
- 6 ounces cream cheese
- 1 ¾ cup finely shredded Montery Jack cheese
- ½ cup flour
- 3 eggs
- 2 cups bread crumbs
- ¼ tsp cumin
- pinch of salt
- pinch of pepper
- Line a baking sheet with paper towels.
- Slice off the tip and make a slit down the middle of each jalapeño pepper (not too far that the sides will come apart)
- Scoop out the seeds.
- Combine the cream cheese, Montery Jack, cumin, salt, and pepper.
- Heat oil in a skillet at 350F.
- Put a spoonful of the cheese mixture in each jalapeño.
- Cover each jalapeño in flour. Then dip it twice in the egg and bread crumbs.
- Place them in the heated oil and fry until golden brown (approximately 2-3 minutes per side).
- Let them drain on the paper towels.
