Margarita Doesn't Have To Be Just A Drink
Hey Smarties! We are happy to have you all enjoying your parties, gatherings and celebrations. It’s just amazing how good is the time we spend partying with our loved ones, and how much energy it gives us. One very important thing, and often, keeping the party up and together, is certainly the drink. It’s the favorite one to many, but there is one very interesting fact about it. What if you could convert your favorite drink to a dessert?
MARGARITA CUPCAKES
Ingredients:
- Cupcakes:
- 1 cup of softened butter,
- 1-½ cup of sugar
- 3 large eggs
- Juice of 3 limes and 1 lime zest
- 1 tablespoon of pure vanilla extract
- 2 cups of all-purpose flour
- 3 tablespoons of cornstarch
- 1-½ cup of baking powder
- 1 tablespoon of kosher salt
- ½ cup of milk
Frosting:
- 1 cup of softened butter
- 5 cups of powdered sugar
- ¼ cup of fresh lime juice
- ¼ cup of tequilla
- Coarse salt for garnish
- Lime zest for garnish
- Small lime wedges for garnish
For cupcakes: Preheat the oven to 350° and line two muffin tins with 18 cupcake liners. Beat butter and sugar until light and fluffy, in a large bowl using a hand mixer. Add eggs, one at a time, beating well after each addition. Add lime juice, zest and vanilla and mix them until combined. In another large bowl, whisk together salt, baking powder, cornstarch and flour. Add ½ the dry ingredients to the wet ingredients, beating until combined. Pour in milk and mix until fully incorporated. Add the remaining dry ingredients. Stir until they’re combined. Fill cupcake liners 3/4 full with batter.
For frosting: Beat butter in a large bowl using a hand mixer, lime juice, tequila and half of powdered sugar until it’s fluffy. Add the remaining powdered sugar and beat until smooth. Pipe the frosting onto the cooled cupcakes. Garnish with coarse salt, lime zest, and lime wedges and a cut decorative straw before serving them on a beautiful clear serving tray.
