Catering Miracles: Mini Hamburger Cupcakes
Everybody likes cupcakes that look like something else. And everybody likes food that looks like other food. This mini hamburger cupcakes recipe accomplishes both feats simultaneously - I mean, just look at them. They're adorable.
What you need:
Cupcakes (hamburger buns):
- 1 box yellow cake mix
- eggs (use quantity from package directions)
- vegetable oil (use quantity from package directions)
- water (use quantity from package directions)
- 1 box brownie mix
- 1/4 cup all-purpose flower
- 1/4 cup vegetable oil
- 3 tablespoons water
- 2 eggs
Decorations (fixings):
- yellow, red and green icing
- white candy sprinkles
Directions:
Mix the yellow cake mix and bake yellow cupcakes according to the directions on the package (cupcake liners are not necessary). While the yellow cupcakes are baking, start making the brownie cookie batter. Combine the brownie mix, flour, oil, water and eggs in a large bowl and mix well. Drop spoonfuls of the dough at least 2 inches apart on a lightly greased cookie sheet. When your yellow cupcakes are done, pull them out of the oven and set aside to cool while you bake the cookies. About 9 minutes in the oven at 350 degrees is all you'll need. Pull them out of the oven and let them cool while you get to work trimming the cupcakes into hamburger buns. Cut the tops off of each (fully cooled) yellow cupcake, then slice the remainder in half. You'll want to keep the two larger slices for your buns and discard (a.k.a. eat) the remainder. Now you're ready for assembly! Spread a little dab of white icing onto the bottom bun (mayo) so it sticks to the cookie. Stack the brownie cookie patties on top of the bottom bun slice, decorate with lettuce (green icing), ketchup (red icing) and mustard (yellow icing) and a few diced onions (white candy sprinkles). Put the top of the cupcake on the top and sprinkle with sesame seeds (more white candy sprinkles). you can even stick these guys with those cute little toothpicks or skewers to keep them together. Display on a cute picnic checkered tray or serve them on similar napkins.
